Anecdote about Development

Nihonbashi-bijin Gozen (a set menu) Aya

Kappo Nihonbashi Toyoda, which was founded in 1863, is a famous restaurant serving Japanese cuisine. Mr. Toru Hashimoto, the fifth owner who has experience as a chef at the official residences of Japan’s ambassadors to Germany, offers menus using the traditional techniques of Japanese cuisine and international sensibility. Nihonbashi-bijin Gozen Aya (*lunch only), focusing on Nihonbashi-bijin, i.e. the Japan Beauty from Edo-Tokyo who are beautiful in body and mind, is a set menu consisting of sashimi, a dish of assorted delicacies, rice, akadashi (soup prepared from dark brown miso), and dessert. Japanese cuisine mainly uses fish and vegetables, and so it is healthy and low in calories?very helpful for women of the Nihonbashi-bijin. The items of the set may change each season; however, that is one of the advantages of Japanese cuisine. Furthermore, the concepts of the set menu, excellent in nutritional balance, high-quality food materials, and reasonable prices, are popular with women working in Nihonbashi as those concepts satisfy them perfectly. Indeed, you can enjoy Nihonbashi-bijin Gozen Aya in mind and body through the variety of beautiful dishes just as the name Aya refers to variety in color. Even for lunch, careful consideration is given to the recipes and serving methods so that authentic Japanese foods are offered. In autumn, shira-ae (vegetables mixed with tofu dressing) in a cup hollowed from a Japanese persimmon is added to the set menu. Experience the charm of autumn through seasonal foods. In addition, pay attention to the tableware, serving, scroll pictures that change each season, and the flower arrangement in the room, and your sense of beauty will be enhanced because the tableware is the dress for dishes.

After the excellent hospitality of eating lunch at Kappo Nihonbashi Toyoda, we recommend trying the authentic kaiseki (a simple meal served before a tea ceremony) in the evening when relaxing without worrying about the time. Counter seats are also available, so first-time visitors can enjoy meals in a more relaxed atmosphere. The owner says, “It is important to tell us your own taste in foods and/or liquor clearly without hesitation, in order to enjoy Japanese cuisine more.” Nihonbashi-bijin should enjoy the spirit of Japan fully.
